Jarrah Honey Antioxidants Jarrah honey has one of the highest antioxidant levels in the world. These antioxidant chemicals like phenolic acids, flavonoids, carotenoids and ascorbic acid are the dominant pool found in Jarrah honey. Jarrah honey’s dark amber colour reflects the contents of pigments with antioxidant properties.
